Though it’s not a root vegetable, fennel seeds belongs to the carrot family. Its long stalks weave together at the base to produce an above-ground bulb that is crisp and dense. It has delicate, feathery leaves that mimic dill at the tips of the stalks above the bulb. Fennel also develops little yellow flowers amid the leaves as it goes to seed. From the bulb to the blossoms, every part of it is edible and may be consumed either raw or cooked.
